Description

A warm and creamy dish combining tender chicken, pillowy gnocchi, and vibrant spinach in a luxurious cheesy sauce.


Ingredients

  • 3-4 boneless, skinless chicken breasts (about 1 lb)
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • ½ cup crispy bacon bits
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste


Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Add bite-sized chicken pieces to the skillet and cook for 5 to 7 minutes until golden brown, stirring occasionally.
  3. Reduce heat, then add cream cheese and chicken broth; stir until the mixture becomes smooth and creamy.
  4. Fold in the gnocchi and spinach, cover, and simmer for 5 to 7 minutes until gnocchi is tender.
  5. Just before serving, stir in shredded cheddar cheese and bacon bits until melted.
  6. Serve hot, garnished with extra cheddar if desired.

Notes

Use a non-stick skillet for easier cooking and clean-up. Adjust the spices to taste. Consider adding red pepper flakes for heat.
