A warm and creamy dish combining tender chicken, pillowy gnocchi, and vibrant spinach in a luxurious cheesy sauce.
Ingredients
- 3-4 boneless, skinless chicken breasts (about 1 lb)
- 16 oz fresh or frozen gnocchi
- 8 oz cream cheese
- 2 cups low-sodium chicken broth
- 4 cups fresh spinach
- 1 cup shredded cheddar cheese
- ½ cup crispy bacon bits
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Heat oil in a large skillet over medium-high heat.
- Add bite-sized chicken pieces to the skillet and cook for 5 to 7 minutes until golden brown, stirring occasionally.
- Reduce heat, then add cream cheese and chicken broth; stir until the mixture becomes smooth and creamy.
- Fold in the gnocchi and spinach, cover, and simmer for 5 to 7 minutes until gnocchi is tender.
- Just before serving, stir in shredded cheddar cheese and bacon bits until melted.
- Serve hot, garnished with extra cheddar if desired.
Notes
Use a non-stick skillet for easier cooking and clean-up. Adjust the spices to taste. Consider adding red pepper flakes for heat.
