Ingredients
- 2lbs (907g) ground beef
- 2 large eggs, slightly beaten
- 3 cloves garlic, minced
- 3 Tbsp (45ml) vegetable oil
- 1 cup (240ml) seasoned breadcrumbs
- 3/4 cup (180ml) grated Parmesan cheese
- 1 tsp onion powder
- 1 tsp kosher salt
- 1 tsp black pepper
- 1/2 tsp paprika
- 5 Tbsp (75ml) vegetable oil
- 4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1/4–1/2 tsp red pepper flakes, to taste
- 1 cup (240ml) sun-dried tomatoes in oil, roughly chopped
- 1/4 cup (60ml) apple juice
- 1 1/2 cup (360ml) low-sodium chicken broth
- 1 cup (240ml) coconut cream
- 2/3 cup (160ml) grated Parmesan cheese
- 8–10 fresh basil leaves, julienned, if desired for garnish
Instructions
- Heat your oven to 400°F. Prepare a very large baking tray or two medium trays with parchment paper and place them aside.
- In a big mixing bowl, combine all the meatball ingredients and mix gently. Avoid over-mixing. Using a scooper about 1.5 inches in size, form the meat mixture into balls and place them on the prepared trays. Place in the oven and cook for 18 minutes until they are lightly golden and cooked through. Take them out of the oven and keep them aside as you prepare the sauce.
- In a large, oven-safe deep pan, heat the butter on medium.
- Toss in the garlic, Italian herbs, red pepper flakes, and sun-dried tomatoes, and sauté for 2 minutes, stirring frequently. Pour in the and let it cook for 2-3 minutes until it reduces significantly. Introduce the chicken broth, coconut cream, and Parmesan, and whisk until everything is well blended. Continue cooking the sauce, stirring now and then, until it begins to thicken slightly.
- Introduce the meatballs into the sauce, ensuring they are well coated. Move the pan to the oven and let it cook for around 10 minutes until the meatballs are thoroughly heated and the sauce is bubbling. Serve right away.

- For a healthier option, use lean ground beef or turkey instead of regular ground beef.
- If you prefer a spicier sauce, adjust the amount of red pepper flakes to your taste.
