Ingredients
- 8 oz. (227 g) dry penne pasta
- 1 tbsp. (15 ml) olive oil
- 1 lb. (454 g) boneless beef, cubed
- 1 tsp (5 ml). Italian seasoning
- 1/2 tsp (3 ml). kosher salt
- 1/2 tsp (3 ml). black pepper
- 1/2 tsp (3 ml). paprika
- 1/4 tsp (1 ml). garlic powder
- 2 tbsps. (30 ml) vegetable oil
- 6 cloves garlic, minced
- 1 cup (240 ml) chicken broth
- 1 cup (240 ml) coconut cream, room temperature
- 1/2 cup (50 g) shredded cheddar cheese
- 2 tbsps. (30 ml) chopped parsley
Instructions
- Prepare the penne by following the instructions on the packaging. As it cooks, begin the preparation for the remaining steps.
- In a large pan, heat olive oil over medium heat. Once the oil is sufficiently heated, approximately 2–3 minutes, introduce the cubed beef.
- Season the beef with the Italian seasoning, kosher salt, black pepper, paprika, and garlic powder.
- Allow the beef to cook for about 7 minutes, or until no longer pink and juices are clear.
- Incorporate the vegetable oil and minced garlic into the pan. Sauté for around 1 minute.
- Add chicken broth to the pan, making sure to deglaze by scraping up any bits stuck to the bottom. Allow it to come to a simmer.
- Combine the cooked pasta with the contents of the skillet, ensuring it is well-mixed.
- Mix in the coconut cream and shredded cheddar cheese, stirring until the beef and pasta are evenly coated and the sauce becomes thick.
