Ingredients

  • – 6 chicken thighs (bone in and skin on) (about 1.4 kg)
  • – kosher salt and fresh cracked pepper
  • – 4 beef bacon slices
  • – 1 small yellow onion, diced
  • – 1 pint (473 ml) cherry tomatoes
  • – 6 garlic cloves, minced or finely sliced
  • – 1 can cream of chicken or cream of mushroom soup
  • – 1 cup (237 ml) beef broth or stock
  • – 1 tbsp (15 ml) Italian seasoning
  • – 3 cups (710 ml) baby spinach
  • – 1/4 cup (30 g) grated parmesan, plus more for serving
  • – red pepper flakes (optional)


Instructions

  1. Set your oven to a temperature of 425°F to preheat.
  2. Clean and dry the chicken thighs thoroughly. Generously sprinkle them with salt and pepper.
  3. Place a large cast iron skillet on the stove over medium-high heat. Lay the bacon strips in a single layer in the skillet. Cook them until they are completely browned and crispy, turning them once.
  4. Reduce the heat to medium, and if the pan starts to smoke, let it cool off the heat for a short while. Place the chicken thighs in the skillet with the skin side facing down, cooking them for 5 minutes. Turn them over and continue cooking for an additional 5 to 8 minutes until they are fully done. Remove the chicken and set it aside.
  5. Add the chopped onion and cherry tomatoes to the skillet, cooking until the onions become soft and see-through and the tomatoes get slightly charred, which should take around 4 to 7 minutes. Incorporate the garlic and keep stirring until it releases its aroma, approximately 2 minutes.
  6. Pour in the cream of chicken soup, beef broth, Italian seasoning, and spinach to the skillet. Stir everything together and let it cook until the spinach wilts and becomes tender. Add the grated parmesan cheese and let the sauce simmer for another minute until the cheese is fully melted.
  7. Crumble the bacon and return it to the skillet along with the cooked chicken, sprinkle with red pepper flakes if desired, and coat each piece of chicken with the sauce.
  8. Transfer the skillet to the oven and cook for around 10 to 15 minutes until the chicken is thoroughly cooked. Serve the dish over pasta, rice, or steamed vegetables and savor the flavors.

Notes

  • Try using smoked or maple bacon for added flavor instead of regular beef bacon.
  • Add sliced mushrooms with the onions and tomatoes for a different texture.
  • Adjust the amount of red pepper flakes to suit your spice preference for a kick of heat.
