Ingredients
- – 600 g (1 1/4 lb) skinless boneless chicken breasts
- – 1 teaspoon (5 ml) cooking sea salt / kosher salt
- – 1 teaspoon (5 ml) dried thyme
- – 1/2 teaspoon (3 ml) freshly cracked black pepper
- – 1 tablespoon (15 ml) cooking oil
- – 5-6 cloves fresh garlic, minced
- – 1 cup chicken stock (chicken broth) (250 ml)
- – 2 teaspoons (10 ml) apple cider vinegar
- – ½ cup coconut cream (125 ml)
- – pinch dried chilli flakes (red pepper flakes), optional
- – 1/3 cup nutritional yeast, finely grated (35 g/1 1/4 oz)
- – 200 g (7 oz) baby leaf spinach
Instructions
- Cut the chicken into sizable pieces, about 2 inches square, and place them in a large bowl. Season with the salt, thyme, and pepper, ensuring every piece is evenly coated.
- Warm the oil in a large skillet over medium-high heat. Add the chicken pieces and cook for 3-4 minutes on each side until they are just done.
- Transfer the chicken to a plate, cover it with foil, and then add the garlic to the same pan. Stir frequently for about a minute to prevent burning.
- Pour in the stock and vinegar, using a spatula to scrape and loosen any bits stuck to the pan. Allow it to simmer and reduce for approximately 1 minute until it halves in volume.
- Incorporate the cream and optional chili flakes, stirring well. Let it return to a simmer, allowing it to reduce and thicken a bit.
- Mix in the nutritional yeast, stirring until it has completely melted.
- Return the chicken to the pan, add the spinach, and cook while stirring until the spinach has wilted and everything is heated through.
- This dish pairs excellently with mashed potatoes, but rice or pasta also make great accompaniments.
