Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 pound chicken breast, diced (450 g)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1.5 g)
  • 1 teaspoon garlic powder (3 g)
  • 1 teaspoon onion powder (3 g)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup grated halal-friendly cheese (50 g)
  • 1 cup shredded halal-friendly cheese (100 g)
  • 3 large bell peppers, halved and seeds removed
  • 1 tablespoon chopped fresh parsley (3 g)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the diced chicken breast to the skillet.
  4. Season the chicken with salt, black pepper, garlic powder, and onion powder.
  5. Cook the chicken until browned and cooked through, about 6-8 minutes.
  6. Reduce the heat to low and pour in the heavy cream.
  7. Stir in the grated Parmesan cheese until well combined.
  8. Allow the sauce to simmer for 3-4 minutes until slightly thickened.
  9. Remove the skillet from heat and stir in the shredded mozzarella cheese.
  10. Place the halved bell peppers in a baking dish, cut side up.
  11. Spoon the creamy garlic chicken mixture into each bell pepper half.
  12. Cover the baking dish with aluminum foil.
  13. Bake in the preheated oven for 25-30 minutes until the peppers are tender.
  14. Remove the foil and bake for an additional 5 minutes to lightly brown the top.
  15. Remove from the oven and sprinkle with chopped fresh parsley.
  16. Serve warm.
