Ingredients
- 1 pound (454 g) boneless, skinless chicken breasts (cubed*)
- 3/4 teaspoon (4 ml) garlic salt
- 1/4 teaspoon (1 ml) ground black pepper
- 4 cloves garlic (minced)
- 1 cup (240 ml) dry white rice (**)
- 3 cup (720 ml) s low-sodium chicken broth
- 1/2 cup (120 ml) heavy cream (***)
- 2 cup (480 ml) s fresh spinach
- 1/4 cup (60 ml) freshly grated Parmesan cheese
Instructions
- Sprinkle the chicken pieces with garlic salt and black pepper to season them.
- In a large skillet, apply a light coat of oil and cook the chicken on medium-high heat until it turns brown, roughly 5-7 minutes.
- Introduce the minced garlic to the pan and continue cooking for an additional minute.
- Combine the rice and chicken broth in the pan, bringing the mixture to a boil.
- Once boiling, cover the pan and let it cook for 12-15 minutes until most of the broth is absorbed.
- Pour in the heavy cream and add the spinach, then stir before covering again and cooking for another 5-7 minutes.
- Mix in the grated Parmesan cheese and then it’s ready to be served!
