Ingredients
- 5 lb (680 g) s chicken breasts diced
- 16 oz (454 g) baby dutch potatoes gold or red
- 2 cup (480 ml) s broccoli florets
- 2 tablespoon (30 ml) s butter
- 2 cloves garlic minced
- 1/2 white onion diced
- 1 cup (240 ml) Monterey jack cheese shredded
- 1 tablespoon (15 ml) cajun seasoning for chicken or use your favorite
- 1 tablespoon (15 ml) Montreal steak seasoning for potatoes or use your favorite
- Olive oil
- 4 tablespoon (60 ml) s butter
- 1 heaping tablespoon garlic minced
- 1/2 cup (120 ml) apple juice
- 2 cup (480 ml) s heavy cream half & half can be substituted but will be thinner
- 2/3 cup (160 ml) parmesan cheese grated
- Salt and pepper to taste
Instructions
- Set your oven to 400°F and prepare a 9×13-inch baking dish by coating it with a nonstick spray.
- Boil water in a pot and cook the potatoes until they are soft enough to pierce with a fork. Remove them using a slotted spoon and cool them on a baking tray.
- In the same pot of boiling water, blanch the broccoli for 2 minutes, then drain and dry them.
- Drizzle the potatoes with 1/4 cup of olive oil and toss to coat evenly. Flatten them using the bottom of a measuring cup, sprinkle with seasoning, and bake for 40-45 minutes until crispy. Keep the oven on.
- Heat a skillet over medium-low and add 2 tablespoons of olive oil, then place the seasoned chicken in the skillet. Cook for about 4 minutes, turning once, then lower the heat and add butter, onion, and garlic. Sauté until the chicken is fully cooked, about 4-5 minutes more. Transfer the chicken and onions to the prepared baking dish.
- In the same skillet, melt butter and sauté the minced garlic until aromatic, then add apple juice. Allow it to reach a gentle boil and let it simmer until the liquid reduces by half.
- Pour in heavy cream and bring to a gentle boil. Let it simmer until it thickens, roughly 5-7 minutes. Remove from heat, mix in the pepper and parmesan, and whisk until smooth. Taste and adjust salt if necessary, keeping in mind the seasoning of the other ingredients.
- Combine the potatoes and broccoli with the chicken in the baking dish, ensuring the ingredients are evenly mixed. Sprinkle with cheese and cover with the creamy garlic parmesan sauce. Bake without covering for 15 minutes, or until heated through and the cheese is melted.
