Ingredients
- 2 boneless, skinless chicken breasts (about 1.3 lb (590 g) s. total)*($6.49)
- 1/2 tsp (3 ml) Italian seasoning($0.05)
- 1/2 tsp (3 ml) salt($0.02)
- 1/4 tsp (1 ml) freshly cracked black pepper($0.02)
- 1/4 cup (60 ml) all-purpose flour($0.06)
- 2 Tbsp (30 ml) olive oil($0.32)
- 2 Tbsp (30 ml) butter, divided ($0.27)
- 1 whole garlic bulb (about 8-9 garlic cloves)**($0.64)
- 1 cup (240 ml) chicken broth($0.17)
- 3/4 cup (180 ml) heavy cream($1.08)
- 1/2 tsp (3 ml) garlic powder($0.05)
- Salt and Pepper to taste($0.04)
Instructions
- Begin by slicing each chicken breast in half horizontally to create thinner pieces, or start with thin-cut chicken breasts if preferred.
- Apply Italian seasoning, salt, and pepper to each piece of chicken. Dust both sides with flour and massage it in until the coating is even.
- Warm a large frying pan over medium heat, then add olive oil and 1 tablespoon of butter. Once heated, lay the chicken in the pan and cook until both sides are golden brown and fully cooked, approximately 4 minutes per side. Transfer the chicken to a clean plate and cover to keep it warm.
- While the chicken cooks, peel the garlic cloves and gently crush them using the side of a large knife by pressing down with your hand.
- After removing the chicken, add the remaining tablespoon of butter to the same pan, followed by the garlic cloves. Lower the heat to medium-low and sauté the garlic for about 3 minutes until it is lightly browned and aromatic, stirring frequently to avoid burning.
- Pour in the chicken broth and heavy cream, then incorporate the garlic powder. Stir and scrape the bottom of the pan to release any browned bits. Let the sauce simmer for 8-10 minutes until it reduces and thickens by around half. Taste and adjust with salt and pepper as necessary.
- Place the chicken back into the pan and ladle the creamy sauce over it. Allow the chicken to warm through. Optionally, garnish with chopped parsley and enjoy!
Notes
- Use half-and-half instead of heavy cream for a lighter version of the dish.
- Mince garlic cloves for a stronger garlic flavor.
- Squeeze lemon juice over the chicken for a touch of freshness.
