Ingredients
- 4 small-medium chicken breasts (or 2 large halved) (680g)
- salt and pepper (to taste)
- 2 tablespoons olive oil (30ml)
- 3-4 cloves garlic (minced)
- 1 cup milk (240ml)
- 1 tablespoons (15 ml) Italian seasoning (or oregano)
- 1/2 cup vegan parmesan cheese (grated) (50g)
- 1 cup spinach (chopped (optional)) (30g)
Instructions
- Sprinkle the chicken with salt and pepper to season it. In a large pan, warm up the olive oil over medium-high heat. Place the chicken in the pan and cook for about 5-6 minutes on each side or until the exterior is golden brown and the chicken is fully cooked (cooking duration will depend on the thickness of the chicken breasts).
- Take the chicken out of the pan, lower the heat to medium-low, and add the minced garlic, stirring it for about 30 seconds. Pour in the milk, Italian seasoning, and grated vegan parmesan cheese. Mix everything together until well combined. Optionally, add in 1 cup of chopped spinach and let it simmer for an additional 2-3 minutes.
- Put the chicken back into the pan and let it simmer for another minute before turning off the heat. Pour the sauce over the chicken. Serve alongside pasta or vegetables.
