A comforting dish featuring whole wheat pasta and a rich, creamy garlic parmesan sauce that’s perfect for weeknight dinners.
Ingredients
- 8 oz whole wheat pasta
- 1 lb lean chicken breast
- 1 cup Greek yogurt
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chicken breast to the skillet, season with salt and pepper, and cook until browned and cooked through, about 6-8 minutes. Remove from heat and slice the chicken.
- Lower the heat and stir in Greek yogurt and grated Parmesan cheese until well combined. If the sauce is too thick, add a small amount of pasta water to reach the desired consistency.
- Add the cooked pasta and sliced chicken to the skillet, tossing to coat everything in the creamy sauce.
- Serve warm, garnished with fresh parsley if desired.
Notes
Let the chicken rest before slicing for more juiciness. Adjust sauce consistency with pasta water if needed.
