Ingredients
- – 1 (454 g) package of penne
- – 3 thin-sliced chicken breasts
- – 1 teaspoon (5 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1 teaspoon (5 ml) Italian seasoning
- – 2 tablespoons (30 ml) vegetable oil
- – 4 garlic cloves, minced
- – 1 tablespoon (15 ml) lemon juice
- – 2 tablespoons (30 ml) cornstarch
- – 1 can of full-fat coconut milk or 355 ml heavy cream
- – 1/2 teaspoon (3 ml) salt
- – 1/2 teaspoon (3 ml) black pepper
- – 1/4-1/2 teaspoon (3 ml) red pepper flakes
- – 1/2 cup (120 ml) finely grated Parmesan cheese
- – 5 ounces (142 g) baby spinach
Instructions
- Heat a large pot of water until boiling, then cook the penne following the package instructions until it reaches a firm texture.
- Sprinkle the chicken with half a teaspoon each of salt and pepper, along with a teaspoon of Italian herbs.
- In a skillet, warm vegetable oil over medium heat and sear the chicken for 5-6 minutes on each side until fully cooked.
- Take the chicken out of the skillet and let it rest for a few minutes before cutting it into slices.
- If needed, add more oil to the skillet, then sauté the minced garlic with lemon juice for about 30 seconds until aromatic.
- Stir in the cornstarch and cook until it turns slightly golden, about 30 seconds to 1 minute.
- Gradually whisk in the coconut milk or heavy cream, and cook while stirring occasionally until the mixture becomes creamy and slightly thickened.
- Turn off the heat, then incorporate the remaining spices, Parmesan cheese, and baby spinach.
- Stir until the spinach has wilted. Return the pasta to the skillet, ensuring it’s well coated with the sauce.
- Arrange the sliced chicken on top, sprinkle with additional Parmesan, and serve. Enjoy your meal!
