Ingredients

  • – 3 thin-sliced chicken breasts

  • – 1/2 teaspoon (3 ml) black pepper
  • – 1 teaspoon (5 ml) Italian seasoning
  • – 2 tablespoons (30 ml) vegetable oil
  • – 4 garlic cloves, minced
  • – 1 tablespoon (15 ml) lemon juice
  • – 2 tablespoons (30 ml) cornstarch
  • – 1 can of full-fat coconut milk or 355 ml heavy cream
  • – 1/2 teaspoon (3 ml) salt
  • – 1/2 teaspoon (3 ml) black pepper
  • – 1/4-1/2 teaspoon (3 ml) red pepper flakes
  • – 1/2 cup (120 ml) finely grated Parmesan cheese
  • – 5 ounces (142 g) baby spinach


Instructions

  1. Heat a large pot of water until boiling, then cook the penne following the package instructions until it reaches a firm texture.
  2. Sprinkle the chicken with half a teaspoon each of salt and pepper, along with a teaspoon of Italian herbs.
  3. In a skillet, warm vegetable oil over medium heat and sear the chicken for 5-6 minutes on each side until fully cooked.
  4. Take the chicken out of the skillet and let it rest for a few minutes before cutting it into slices.
  5. If needed, add more oil to the skillet, then sauté the minced garlic with lemon juice for about 30 seconds until aromatic.
  6. Stir in the cornstarch and cook until it turns slightly golden, about 30 seconds to 1 minute.
  7. Gradually whisk in the coconut milk or heavy cream, and cook while stirring occasionally until the mixture becomes creamy and slightly thickened.
  8. Turn off the heat, then incorporate the remaining spices, Parmesan cheese, and baby spinach.
  9. Stir until the spinach has wilted. Return the pasta to the skillet, ensuring it’s well coated with the sauce.
