  • – 1 tablespoon (15 ml) vegetable oil
  • – 1 tablespoon (15 ml) all-purpose flour
  • – 3 cloves garlic, minced
  • – 1/2 cup (120 ml) chicken broth
  • – 1 cup (240 ml) heavy/whipping cream
  • – 1/2 cup (120 ml) grated cheese (e.g., Cheddar or Mozzarella)
  • – 1 tablespoon (15 ml) fresh parsley, chopped


Instructions

  1. Slice the chicken breasts in half lengthwise, creating four thinner sections. Generously coat both sides with salt, pepper, and garlic powder.
  2. Warm up a pan over medium-high heat, adding olive and vegetable oil, and allow it to heat for a few moments.
  3. Sauté the chicken for approximately 5-6 minutes per side until well-browned and fully cooked. Move the chicken aside to a dish and cover loosely with foil to maintain warmth (turn off the stove during this step).
  4. Reignite the stove to medium-high, and add flour and minced garlic to the skillet (if the pan has cooled, let it reheat slightly). Cook for around a minute, stirring frequently.
  5. Introduce the chicken broth, whisking until the flour is blended and the mixture has reduced by half.
  6. Mix in the cream, allowing it to simmer softly for a few minutes until it reaches your preferred thickness (reduce the heat if it begins to boil rapidly). Remove the skillet from heat and blend in the grated cheese until it melts into the sauce.
  7. Return the chicken to the skillet, along with any juices from the plate, and ladle some sauce over it. Adjust seasoning with additional salt and pepper if needed, and garnish with chopped parsley.
