Ingredients

  • – 6 strips beef bacon (or turkey bacon)
  • – 1/2 onion, finely diced
  • – 1 1/2 cups (360 ml) chopped button mushrooms
  • – 3 cloves garlic, minced
  • – 2 (10.5-ounce) cans cream of mushroom condensed soup
  • – 1/4 cup (60 ml) milk
  • – 1 cup (240 ml) shredded Monterey Jack cheese
  • – salt and pepper
  • – 4 (14.5-ounce) cans cut green beans, drained
  • – 1 1/2 cups (360 ml) French fried onions


Instructions

  1. – Set your oven to 350°F and lightly coat a 9×13-inch baking dish with nonstick spray.
  2. – In a large pan, cook the bacon over medium-low heat until it’s crispy. Transfer to paper towels to drain, then crumble. Keep about 2 tablespoons of the bacon fat in the pan, discarding the rest, and place the pan back on medium heat. Add the onions and sauté, stirring now and then, for about 5 minutes or until they become clear. Mix in the mushrooms and continue cooking, stirring occasionally, for another 5 minutes until they turn golden brown. Add the garlic and let it cook for 1 minute. Blend in the concentrated mushroom soup and add the crumbled bacon back to the mix. Stir well to combine. Incorporate the milk and cheese, stirring until the cheese is fully melted. Season with salt and pepper according to your preference. Gently mix in the green beans until everything is evenly combined.
  3. – Transfer the mixture into the dish you prepared earlier. Sprinkle the fried onions on top. Bake without covering for 30 minutes or until the casserole is heated through and bubbling.
