Ingredients
- 1 pound (454 g) (450 grams) boneless, skinless chicken breast
- 2 tablespoon s (30 ml) olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon (15 ml) (15 grams) harissa paste
- 1 cup (240 ml) heavy cream
- 8 ounce (227 g) s (225 grams) penne pasta
- 1/2 cup (120 ml) chicken broth
- 1 cup (240 ml) (150 grams) cherry tomatoes, halved
- 1/2 cup (120 ml) (75 grams) crumbled feta cheese
- Salt, to taste
- Black pepper, to taste
- 1 tablespoon (15 ml) (3 grams) chopped fresh parsley
Instructions
- Boil a pot of salted water for the penne pasta.
- Cook the penne pasta according to package instructions until al dente.
- Drain the pasta and set aside.
- Cut the chicken breast into bite-sized pieces.
- Season the chicken pieces with salt and black pepper.
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken pieces to the skillet and cook until browned and cooked through, about 6-8 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil.
- Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and cook for an additional 1 minute.
- Stir in the harissa paste and cook for about 1 minute.
- Pour in the chicken broth and bring to a simmer.
- Add the heavy cream, stirring to combine, and let the sauce simmer for 3-4 minutes.
- Add the halved cherry tomatoes to the sauce and cook for another 2 minutes.
- Return the cooked chicken to the skillet and stir to coat with the sauce.
- Add the cooked penne pasta to the skillet and toss to combine everything evenly.
- Season with additional salt and black pepper to taste.
- Sprinkle the crumbled feta cheese over the pasta.
- Garnish with chopped fresh parsley before serving.
