Ingredients

  • 1 pound (454 g) (450 grams) boneless, skinless chicken breast
  • 2 tablespoon s (30 ml) olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) (15 grams) harissa paste
  • 1 cup (240 ml) heavy cream
  • 8 ounce (227 g) s (225 grams) penne pasta
  • 1/2 cup (120 ml) chicken broth
  • 1 cup (240 ml) (150 grams) cherry tomatoes, halved
  • 1/2 cup (120 ml) (75 grams) crumbled feta cheese
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon (15 ml) (3 grams) chopped fresh parsley


Instructions

  1. Boil a pot of salted water for the penne pasta.
  2. Cook the penne pasta according to package instructions until al dente.
  3. Drain the pasta and set aside.
  4. Cut the chicken breast into bite-sized pieces.
  5. Season the chicken pieces with salt and black pepper.
  6. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  7. Add the chicken pieces to the skillet and cook until browned and cooked through, about 6-8 minutes.
  8. Remove the chicken from the skillet and set aside.
  9. In the same skillet, add the remaining tablespoon of olive oil.
  10. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  11. Add the minced garlic and cook for an additional 1 minute.
  12. Stir in the harissa paste and cook for about 1 minute.
  13. Pour in the chicken broth and bring to a simmer.
  14. Add the heavy cream, stirring to combine, and let the sauce simmer for 3-4 minutes.
  15. Add the halved cherry tomatoes to the sauce and cook for another 2 minutes.
  16. Return the cooked chicken to the skillet and stir to coat with the sauce.
  17. Add the cooked penne pasta to the skillet and toss to combine everything evenly.
  18. Season with additional salt and black pepper to taste.
  19. Sprinkle the crumbled feta cheese over the pasta.
  20. Garnish with chopped fresh parsley before serving.
