Ingredients
- 2 chicken breasts (boneless, skinless)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon crushed red pepper flakes (optional)
- 8 ounces fettuccine or linguine pasta
- 2 tablespoons chopped fresh parsley or basil
Instructions
- Season chicken breasts on both sides with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium-high heat, add the chicken and sear until golden brown and fully cooked, about 6-7 minutes on each side. Remove and slice.
- In boiling water, cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- In the skillet, melt butter and sauté minced garlic until fragrant, about 1-2 minutes.
- Pour in heavy cream, mixing well, and simmer for 2-3 minutes.
- Whisk in grated Parmesan cheese until the sauce thickens.
- Add drained pasta to the creamy sauce and toss to coat, using reserved pasta water as needed.
- Return sliced chicken to the skillet, mixing everything and letting it heat through for 2-3 minutes.
- Garnish with chopped parsley or basil, and serve hot.
Notes
For added flavor, consider marinating the chicken before cooking. Serve with garlic bread or salad.
