Ingredients
- 1-1/2 lbs (680 g) boneless skinless chicken breasts (about 4 breasts)
- Salt and pepper to taste
- 2 tbsp (30 ml) vegetable oil, divided
- 1 tbsp (15 ml) olive oil
- 3 medium cloves garlic, minced
- 1 cup (240 ml) chicken broth
- 1/2 cup (120 ml) heavy cream
- 3 tbsp (45 ml) mustard
- 1 medium lemon, zested and juiced
- 2 tbsp (30 ml) minced fresh parsley
- Rice or pasta for serving
Instructions
- Sprinkle salt and pepper on both sides of the chicken breasts as desired. Warm 1 tablespoon of vegetable oil and the olive oil in a large frying pan over medium-high heat until hot and shimmering. Add the chicken breasts to the pan and cook for 3-5 minutes on each side until they are nicely browned. Remove the chicken and set it aside on a plate.
- Add the remaining vegetable oil to the pan on medium heat. Stir in the minced garlic and cook for 1-2 minutes until the aroma is released. Pour in the chicken broth and use a wooden spoon to loosen any caramelized bits from the pan. Gradually mix in the heavy cream and mustard until the sauce is smooth.
- Place the chicken back into the sauce and bring it to a gentle boil over medium heat. Lower the heat, cover the pan, and let it simmer for 8-10 minutes, occasionally stirring, until the chicken reaches an internal temperature of 165°F.
