A quick and flavorful dish featuring chicken breasts simmered in a rich, creamy lemon garlic sauce.
Ingredients
- 4 boneless, skinless chicken breasts (1.5 to 2 pounds)
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- Juice and zest of 1 lemon
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat.
- Pat the chicken breasts dry and season with salt and pepper.
- Add the chicken to the skillet and cook for 6-7 minutes per side, until golden brown and the internal temperature reaches 165°F.
- Remove the chicken from the skillet and set aside.
- In the same skillet, sauté minced garlic for 1 minute.
- Add chicken broth and deglaze the pan, then stir in lemon juice and zest.
- Once the mixture simmers, stir in heavy cream and simmer for a few minutes until the sauce thickens.
- Return the chicken to the skillet, coating it with the sauce.
- Serve on a platter, garnished with fresh parsley.
Notes
For a variation, substitute chicken broth with vegetable broth or add vegetables like broccoli or spinach to the dish.
