Description

A quick and flavorful dish featuring chicken breasts simmered in a rich, creamy lemon garlic sauce.


Ingredients

  • 4 boneless, skinless chicken breasts (1.5 to 2 pounds)
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • Juice and zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Pat the chicken breasts dry and season with salt and pepper.
  3. Add the chicken to the skillet and cook for 6-7 minutes per side, until golden brown and the internal temperature reaches 165°F.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, sauté minced garlic for 1 minute.
  6. Add chicken broth and deglaze the pan, then stir in lemon juice and zest.
  7. Once the mixture simmers, stir in heavy cream and simmer for a few minutes until the sauce thickens.
  8. Return the chicken to the skillet, coating it with the sauce.
  9. Serve on a platter, garnished with fresh parsley.

For a variation, substitute chicken broth with vegetable broth or add vegetables like broccoli or spinach to the dish.
