A nutritious and delicious creamy low carb chicken casserole that combines tender chicken, crunchy broccoli, and crispy turkey bacon, all enveloped in a rich, cheesy sauce.
Ingredients
- 5 cups broccoli florets
- 8 slices cooked turkey bacon, chopped
- 4 cups cooked chicken, shredded or diced
- 3 cloves garlic, minced
- ½ cup shredded mozzarella
- ½ cup shredded cheddar
- 1 cup ranch dressing
- ½ cup shredded cheddar (for topping)
- ½ cup shredded mozzarella (for topping)
Instructions
- Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
- Steam or blanch the broccoli until just tender, then drain well.
- Mix together the chicken, broccoli, turkey bacon, garlic, mozzarella, cheddar, and ranch dressing in a large bowl.
- Spread the mixture evenly in the greased baking dish.
- Sprinkle the top with additional cheddar and mozzarella.
- Bake for 25–30 minutes until hot and bubbly.
- Let rest for 5–10 minutes before serving.
Notes
For added flavor, season the chicken before cooking and use pre-cooked chicken to save time.
