Ingredients
- – 2 lbs. (900 g) boneless skinless chicken breasts raw
- – 1.5 tsp. (7.5 ml) salt
- – 1 tsp. (5 ml) chili powder
- – fresh cracked pepper
- – 1 Tbsp. (15 ml) olive oil
- – 8 oz. (225 g) mushrooms sliced
- – 3 cloves garlic minced
- – 1 can reduced-sodium cream of mushroom soup 10.5 oz (298 g) can
- – 1 cup (240 ml) water
- – 1/2 Tbsp. (7.5 ml) cornstarch (or arrowroot powder) optional
- – 1/2-1 Tbsp. (7.5-15 ml) water (to mix) optional with cornstarch
Instructions
- Divide each chicken breast horizontally to create two thinner pieces. Flatten the chicken pieces to an even thickness of about ½ inch using a meat mallet. Sprinkle half of the salt and chili powder on both sides, and add freshly cracked black pepper.
- Warm up the olive oil in a big frying pan over medium heat. Place the seasoned chicken pieces in the skillet and cook for 4-5 minutes on each side. Move them to a plate and keep them aside.
- Introduce the sliced mushrooms and minced garlic to the skillet. Stir them occasionally until the mushrooms are browned, which should take a few minutes.
- Pour the cream of mushroom soup into the skillet. Fill the soup can with water and add it to the skillet as well (1 cup of water). Whisk the mixture until the soup and water are well blended and bring it to a boil.
- Put the chicken back in the skillet and let it simmer for about 5 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- For a thicker sauce, if desired: In a small bowl, mix the cornstarch with water. Remove the chicken and set it aside. Stir the mixture into the sauce and whisk until combined. Let it simmer for 1 minute to thicken, adding more if a thicker consistency is preferred.
- You can either return the chicken to the skillet and coat it with the sauce or serve it over brown or white rice, cauliflower rice, a mix of both, mashed potatoes, or roasted vegetables, with the sauce drizzled on top.
