A comforting dish featuring tender chicken breasts smothered in a rich and creamy mushroom sauce.
Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups mushrooms, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Season the chicken breasts with salt and pepper. Cook until golden brown on both sides, about 6-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, add the chopped onions and minced garlic. Sauté until translucent, approximately 2-3 minutes.
- Add the sliced mushrooms and cook until softened, stirring occasionally for about 4-5 minutes.
- Pour in the chicken broth and bring to a simmer. Stir in the heavy cream and reduce the heat to low. Cook until the sauce thickens, around 5-7 minutes.
- Return the chicken to the skillet and simmer for an additional 5 minutes, allowing the flavors to meld.
- Serve the creamy mushroom sauce over the chicken with mashed potatoes on the side, garnished with fresh parsley.
Notes
Consider marinating the chicken for an hour before cooking for added flavor. Pair with sides like steamed vegetables or a fresh salad.
