Ingredients
- 1 tablespoon olive oil (15 ml)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 teaspoon (3 ml) red pepper flakes
- 1/2 cup (120 ml) sun-dried tomatoes, chopped (packed in oil, drained)
- 2 cans (15 ounces (425 g) each) white beans, drained and rinsed
- 1 cup vegetable broth (240 ml)
- 1/2 cup coconut cream (120 ml)
- 1/2 cup (120 ml) grated vegan cheese (45 grams)
- Salt, to taste
- Black pepper, to taste
- 1/4 cup (60 ml) fresh basil, chopped
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion to the pot and sauté until translucent, about 3-4 minutes.
- Stir in the minced garlic and red pepper flakes, cooking for another 1 minute.
- Add the chopped sundried tomatoes to the pot and cook for 2 minutes.
- Mix in the drained and rinsed white beans, stirring to combine.
- Pour in the vegetable broth and bring the mixture to a simmer.
- Reduce the heat to low and stir in the heavy cream.
- Add the grated Parmesan cheese, stirring until melted and well incorporated.
- Season with salt and black pepper to taste.
- Remove from heat and stir in the chopped fresh basil.
- Serve warm, garnished with additional basil if desired.
