Ingredients

  • 1 tablespoon olive oil (15 ml)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon (3 ml) red pepper flakes
  • 1/2 cup (120 ml) sun-dried tomatoes, chopped (packed in oil, drained)
  • 2 cans (15 ounces (425 g) each) white beans, drained and rinsed
  • 1 cup vegetable broth (240 ml)
  • 1/2 cup coconut cream (120 ml)
  • 1/2 cup (120 ml) grated vegan cheese (45 grams)
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup (60 ml) fresh basil, chopped


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion to the pot and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and red pepper flakes, cooking for another 1 minute.
  4. Add the chopped sundried tomatoes to the pot and cook for 2 minutes.
  5. Mix in the drained and rinsed white beans, stirring to combine.
  6. Pour in the vegetable broth and bring the mixture to a simmer.
  7. Reduce the heat to low and stir in the heavy cream.
  8. Add the grated Parmesan cheese, stirring until melted and well incorporated.
  9. Season with salt and black pepper to taste.
  10. Remove from heat and stir in the chopped fresh basil.
  11. Serve warm, garnished with additional basil if desired.
