Ingredients
- 2 chicken breasts
- 1 cup orzo pasta
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes
- 1 lemon, juiced
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 3 cups chicken broth
- Salt, to taste
- Pepper, to taste
Instructions
- In a large pan, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper, then add them to the pan. Cook until browned and cooked through, about 5-7 minutes per side.
- Remove the chicken and set aside.
- In the same pan, add minced garlic and cook for 1 minute until fragrant.
- Stir in the orzo, sun-dried tomatoes, and chicken broth. Bring to a boil, then reduce heat to low and simmer until orzo is cooked, about 10-12 minutes.
- Add the chicken back to the pan along with fresh spinach, lemon juice, and Parmesan cheese. Stir until spinach is wilted and everything is combined.
