Ingredients
- 1.5 pounds chicken breasts, diced
- 4 tablespoons butter
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 teaspoons Italian seasoning
- 2.5 cups chicken broth
- 1 cup long grain white rice
- 1/2 cup heavy cream
- 1/2 cup freshly grated parmesan cheese
Instructions
- Heat the butter in a large skillet over medium-high heat. Once melted, add the diced onion and cook until softened, stirring occasionally.
- Add the diced chicken, Italian seasoning, salt, and pepper to the skillet. Sauté until the chicken turns golden brown.
- Stir in the minced garlic and cook briefly.
- Pour in the chicken broth and add the rice, bringing the mixture to a boil.
- Reduce heat to a simmer, cover the skillet, and allow to simmer for 17-20 minutes, or until the rice is tender.
- Stir in the heavy cream and grated parmesan cheese until well combined. Serve immediately, garnished with parsley if desired.
