Ingredients
- 1-2 Chicken breasts (225-450g)
- 1/2 tsp garlic powder (2.5ml)
- 1/2 tsp salt (2.5ml)
- 1/4 tsp pepper (1.25ml)
- 1/2 tsp red pepper flakes, optional (2.5ml)
- 1/2 tsp dried oregano (2.5ml)
- 1/2 tsp vegetable oil (2.5ml)
- 2-3 Tbsp spinach walnut pesto, more as needed (30-45g)
- 2 flatbreads (2)
- 1/2 cup spinach walnut pesto (120ml)
- 3/4 cup shredded cheese (mozzarella or alternative) (180ml)
- 1/4 cup tomatoes, sliced (60ml)
- Red pepper flakes, optional
- Grated cheese (Parmesan or alternative), optional
Instructions
- If you plan to make the spinach walnut pesto from scratch, prepare it initially. Otherwise, slice the chicken breasts into small, bite-sized chunks and place them in a bowl. Combine the seasoning in a separate small bowl, then sprinkle it over the chicken, ensuring an even coating. Heat 1/2 teaspoon of oil in a skillet or frying pan, and cook the chicken, stirring frequently, for approximately 12 to 15 minutes until fully cooked.
- As the chicken cooks, preheat your oven to 375°F. Stir roughly 2 tablespoons of pesto into the chicken in the skillet, making sure it’s thoroughly coated with the flavor. Lower the heat, allowing it to simmer for 2 minutes, then switch off the heat and set the skillet aside.
- Arrange the flatbreads on a baking sheet. Spread a moderate layer of pesto evenly over each piece of bread, then distribute the cheese and sliced tomatoes on top. Finally, add the cooked chicken pieces.
- Position the baking sheet in the middle of the oven and bake for around 10 minutes, or until the cheese has melted, is bubbling, and the crust has turned slightly golden. Allow it to rest for a minute or two, then cut into slices and savor!
