Ingredients

  • – 2 large chicken breast (about 450g)
  • – 2 teaspoons (10 ml) Italian seasoning
  • – Salt/Pepper
  • – 2 tablespoons (30 ml) butter, melted
  • – 1-2 tablespoons (23 ml) vegetable oil
  • – 10.5 oz. (300g) cream of chicken soup
  • – 1 ½ cups (360ml) milk
  • – 1 cup (240 ml) sour cream, at room temp
  • – 1/2 teaspoon (3 ml) onion powder
  • – 1 oz. (28g) packet Ranch seasoning mix


Instructions

  1. Cut the chicken breasts into 2-3 thinner pieces. If necessary, use a meat tenderizer to flatten them to about ½ inch thickness.
  2. Season both sides of the chicken slices with Italian herbs and salt/pepper. Brush one side of each piece with melted butter, ensuring the butter is not too hot.
  3. Warm vegetable oil in a large skillet over medium-high heat. Cook the chicken slices in batches for 4-5 minutes on each side until they achieve a golden crust. Remove from the skillet and set aside.
  4. In the same skillet, combine the cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning. Stir until well mixed. Allow the mixture to simmer gently and thicken for 5 minutes.
  5. Return the chicken to the skillet and cover with the sauce. Partially cover the pan and let the chicken cook through, soaking up the sauce flavors, for about 10 minutes.
  6. Optional: Serve alongside baked potatoes and drizzle the sauce over each potato for added flavor!
