Ingredients
- – 2 large chicken breast (about 450g)
- – 2 teaspoons (10 ml) Italian seasoning
- – Salt/Pepper
- – 2 tablespoons (30 ml) butter, melted
- – 1-2 tablespoons (23 ml) vegetable oil
- – 10.5 oz. (300g) cream of chicken soup
- – 1 ½ cups (360ml) milk
- – 1 cup (240 ml) sour cream, at room temp
- – 1/2 teaspoon (3 ml) onion powder
- – 1 oz. (28g) packet Ranch seasoning mix
Instructions
- Cut the chicken breasts into 2-3 thinner pieces. If necessary, use a meat tenderizer to flatten them to about ½ inch thickness.
- Season both sides of the chicken slices with Italian herbs and salt/pepper. Brush one side of each piece with melted butter, ensuring the butter is not too hot.
- Warm vegetable oil in a large skillet over medium-high heat. Cook the chicken slices in batches for 4-5 minutes on each side until they achieve a golden crust. Remove from the skillet and set aside.
- In the same skillet, combine the cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning. Stir until well mixed. Allow the mixture to simmer gently and thicken for 5 minutes.
- Return the chicken to the skillet and cover with the sauce. Partially cover the pan and let the chicken cook through, soaking up the sauce flavors, for about 10 minutes.
- Optional: Serve alongside baked potatoes and drizzle the sauce over each potato for added flavor!
