Creamy Ranch Chicken Enchiladas are a comforting dish filled with shredded chicken and ranch dressing, wrapped in tortillas and topped with melted cheese.
Ingredients
- 2 cups shredded chicken
- 1/2 cup ranch dressing
- 8 flour tortillas
- 1 cup shredded cheese (cheddar or a blend)
- 1/2 cup chopped green onions
- 1/2 cup salsa
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the shredded chicken, ranch dressing, garlic powder, onion powder, salt, and pepper in a bowl.
- Spoon the chicken mixture evenly onto each tortilla, then roll them up tightly and place them seam-side down in a baking dish.
- Pour salsa over the top of the enchiladas and sprinkle with shredded cheese and green onions.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Serve hot with your favorite toppings such as sour cream or additional salsa.
Notes
For a creamier texture, mix a small amount of cream cheese into the ranch dressing. Consider using pre-cooked rotisserie chicken for ease.
