Description

Creamy Ranch Chicken Enchiladas are a comforting dish filled with shredded chicken and ranch dressing, wrapped in tortillas and topped with melted cheese.


Ingredients

  • 2 cups shredded chicken
  • 1/2 cup ranch dressing
  • 8 flour tortillas
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup chopped green onions
  • 1/2 cup salsa
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the shredded chicken, ranch dressing, garlic powder, onion powder, salt, and pepper in a bowl.
  3. Spoon the chicken mixture evenly onto each tortilla, then roll them up tightly and place them seam-side down in a baking dish.
  4. Pour salsa over the top of the enchiladas and sprinkle with shredded cheese and green onions.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

For a creamier texture, mix a small amount of cream cheese into the ranch dressing. Consider using pre-cooked rotisserie chicken for ease.
