Description

A quick and delicious creamy pasta dish featuring rotisserie chicken, fresh spinach, and Parmesan, perfect for family dinners.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Sauté the minced garlic for about one minute until fragrant.
  3. Add heavy cream and chicken broth to the skillet; stir well and let simmer for about five minutes until slightly thickened.
  4. Stir in the shredded chicken and fresh spinach; cook until the spinach wilts, about two minutes.
  5. Combine the cooked pasta with the sauce, tossing until evenly coated. Season with salt and pepper as needed.
