Description

A deliciously creamy pasta dish made with shredded rotisserie chicken, fresh spinach, and a rich sauce, perfect for weeknight dinners.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 8 oz pasta (penne or fettuccine)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups fresh spinach
  • Salt and pepper to taste
  • 1 tbsp olive oil


Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about one minute until fragrant.
  3. Add heavy cream and chicken broth to the skillet; stir well and let the mixture simmer for about five minutes until slightly thickened.
  4. Stir in the shredded chicken and fresh spinach; cook until the spinach wilts, about two minutes.
  5. Combine the cooked pasta with the sauce, tossing until evenly coated. Season with salt and pepper as needed.
  6. Serve warm, garnished with freshly grated Parmesan cheese.

Notes

Save some pasta water to adjust the sauce’s consistency if needed. Customize by adding your favorite vegetables.
