Description

A comforting dish of tender chicken breasts and fluffy rice enveloped in a rich, creamy sauce, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup of long-grain white rice
  • 2 cups of chicken broth
  • 1 cup of heavy cream
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 cup of frozen peas
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish


Instructions

  1. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then sauté for 5-7 minutes on each side until golden brown. Remove from skillet.
  2. Add chopped onions to the skillet, sauté for about 3 minutes until translucent. Add minced garlic and cook for an additional minute.
  3. Add rice to the mixture and toast lightly.
  4. Pour in chicken broth, bring to a boil, then reduce heat and return chicken to skillet. Cover and simmer for 20 minutes.
  5. Remove the lid, add heavy cream and frozen peas, stir gently, and cook for an additional 5 minutes. Garnish with fresh parsley before serving.

Notes

For a lighter version, replace half of the heavy cream with low-fat milk. Adjust seasonings to taste.
