Description
A comforting dish of tender chicken breasts and fluffy rice enveloped in a rich, creamy sauce, perfect for family dinners.
Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup of long-grain white rice
- 2 cups of chicken broth
- 1 cup of heavy cream
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 cup of frozen peas
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper, then sauté for 5-7 minutes on each side until golden brown. Remove from skillet.
- Add chopped onions to the skillet, sauté for about 3 minutes until translucent. Add minced garlic and cook for an additional minute.
- Add rice to the mixture and toast lightly.
- Pour in chicken broth, bring to a boil, then reduce heat and return chicken to skillet. Cover and simmer for 20 minutes.
- Remove the lid, add heavy cream and frozen peas, stir gently, and cook for an additional 5 minutes. Garnish with fresh parsley before serving.
Notes
For a lighter version, replace half of the heavy cream with low-fat milk. Adjust seasonings to taste.
