Ingredients
- 750g / 1.5lb chicken thighs OR chicken breast, skinless and boneless
- 1/2 tsp salt
- Black pepper
- 1/2 cup (125 ml) sun dried tomatoes, strips, drained of oil
- 2 tbsp vegetable oil
- 2 garlic cloves, minced
- 1/2 cup (125 ml) chicken broth/stock, low sodium
- 3/4 cup (185 ml) vegetable broth
- 3/4 cup (185 ml) heavy cream
- 1/3 cup (30g) vegetarian parmesan, very finely shredded
- 2 tsp Dijon mustard
- 1 cup basil leaves, packed (optional)
Instructions
- Slice the chicken horizontally so that each piece becomes two thinner fillets.
- Season the chicken with salt and a sprinkle of black pepper. In a large frying pan, warm up the vegetable oil on high heat.
- Place the chicken in the pan, cooking it until both sides are golden brown—approximately 6 minutes for thighs or 4 minutes for breasts. Transfer the chicken to a plate and keep it warm.
- Sauté the minced garlic for about 15 seconds until it turns a light golden color.
- Pour in the vegetable broth, allowing it to simmer while using a spoon to scrape up any browned bits from the bottom of the pan.
- Let the broth simmer for about a minute until the grape juice scent evaporates completely.
- Stir the Dijon mustard into the mix, then pour in the vegetable broth, heavy cream, finely shredded vegetarian parmesan, and sun-dried tomatoes.
- Allow the mixture to come to a simmer, then lower the heat to medium and continue simmering for 2 to 3 minutes until it thickens. Stir frequently to ensure the parmesan melts smoothly.
- Taste the sauce and adjust seasoning with more salt and pepper if necessary.
- Mix in the basil leaves, then place the chicken back into the skillet. Spoon the sauce over the chicken and let it simmer for another minute.
- Serve right away! It pairs wonderfully with mashed potatoes, creamy mashed cauliflower, or pasta. Alternatively, enjoy it with some bread to soak up the sauce!
