A comforting and rich dish featuring tender chicken, creamy sauce, and tangy sun-dried tomatoes over fettuccine.
Ingredients
- 8 oz fettuccine pasta
- 1 lb chicken breast, sliced
- 1 cup sun-dried tomatoes, chopped
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the fettuccine according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the sliced chicken, season with salt and pepper, and sauté until cooked through.
- Add minced garlic and sun-dried tomatoes, cooking for another 2 minutes.
- Pour in the heavy cream and bring to a simmer. Stir in the Parmesan cheese until melted and the sauce is creamy.
- Add the cooked fettuccine to the skillet, tossing to coat in the sauce.
- Serve hot, garnished with fresh basil.
Notes
For a lighter sauce, substitute half of the heavy cream with low-fat milk.
