Ingredients

  • 1.5 lb (750g) chicken thighs OR chicken breast, skinless and boneless
  • 1/2 tsp salt
  • Black pepper
  • 1/2 cup (125 ml) sun-dried tomatoes, strips, drained of oil (Note 1)
  • 2 tbsp vegetable oil
  • 2 garlic cloves, minced
  • 1/2 cup (125 ml) chicken broth/stock, low sodium
  • 3/4 cup (185 ml) beef broth (substitute for grape juice)
  • 3/4 cup (185 ml) thickened / heavy cream
  • 1/3 cup (30g) vegetarian parmesan, very finely shredded (Note 2)
  • 2 tsp Dijon mustard
  • 1 cup basil leaves, packed (optional)


Instructions

  1. Slice the chicken breasts horizontally to create two thin fillets.
  2. Season the chicken with salt and pepper. In a large pan, heat the vegetable oil over high heat.
  3. Place the chicken in the pan and cook until both sides are golden brown—approximately 6 minutes for thighs or 4 minutes for breasts. Transfer to a plate and keep warm.
  4. Add the minced garlic to the skillet and sauté for about 15 seconds until it turns a light golden color.
  5. Pour in the beef broth, allowing it to start bubbling. Scrape the skillet’s bottom to incorporate any browned bits into the broth.
  6. Let the broth simmer for about a minute until its aroma dissipates, indicating evaporation.
  7. Stir in the Dijon mustard, followed by the chicken stock, heavy cream, finely shredded parmesan, and strips of sun-dried tomatoes.
  8. Allow the mixture to come to a gentle boil, then lower the heat to medium and let it cook for 2 to 3 minutes until it thickens. Stir occasionally to ensure the parmesan melts smoothly.
  9. Sample the sauce and adjust the seasoning with additional salt and pepper if needed.
  10. Mix the basil leaves into the sauce, then return the chicken to the skillet. Spoon some sauce over the chicken and let it simmer for another minute.
  11. Serve right away! It pairs well with mashed potatoes, creamy mashed cauliflower, or pasta. Alternatively, serve with bread to soak up the sauce!
