Ingredients

  • 2 cups (480 ml) cooked pasta
  • 2 tablespoons (30 ml) olive oil
  • 1 pound (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 teaspoon (5 g) salt
  • 1/2 teaspoon (2.5 g) black pepper
  • 1 teaspoon (5 g) garlic powder
  • 1 teaspoon (5 g) onion powder
  • 1/2 teaspoon (2.5 g) paprika
  • 1 cup (240 ml) sunflower seed cream
  • 1/2 cup (120 ml) chicken broth
  • 1/4 cup (60 ml) grated Parmesan cheese
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon (5 g) dried basil
  • 1 teaspoon (5 g) dried oregano
  • 1/2 cup (75 g) dried beef, chopped
  • 1/4 cup (60 ml) fresh parsley, chopped


Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add the chicken pieces to the skillet.
  3. Season the chicken with salt, black pepper, garlic powder, onion powder, and paprika.
  4. Cook the chicken until it’s browned and cooked through, about 6-8 minutes.
  5. Remove the chicken from the skillet and set aside.
  6. In the same skillet, add the remaining 1 tablespoon of olive oil.
  7. Stir in the sunflower seed cream and chicken broth.
  8. Bring the mixture to a gentle simmer over medium heat.
  9. Add grated Parmesan cheese and stir until melted and smooth.
  10. Stir in the lemon juice, dried basil, and dried oregano.
  11. Add the sun-dried tomatoes to the sauce.
  12. Return the cooked chicken to the skillet.
  13. Add the cooked pasta to the skillet and toss to combine.
  14. Allow everything to heat through for 2-3 minutes.
  15. Remove from heat and stir in the chopped fresh parsley.
  16. Serve the creamy sunflower chicken pasta warm.
