Ingredients
- 2 cups (480 ml) cooked pasta
- 2 tablespoons (30 ml) olive oil
- 1 pound (450 g) boneless, skinless chicken breast, cut into bite-sized pieces
- 1 teaspoon (5 g) salt
- 1/2 teaspoon (2.5 g) black pepper
- 1 teaspoon (5 g) garlic powder
- 1 teaspoon (5 g) onion powder
- 1/2 teaspoon (2.5 g) paprika
- 1 cup (240 ml) sunflower seed cream
- 1/2 cup (120 ml) chicken broth
- 1/4 cup (60 ml) grated Parmesan cheese
- 1 tablespoon (15 ml) lemon juice
- 1 teaspoon (5 g) dried basil
- 1 teaspoon (5 g) dried oregano
- 1/2 cup (75 g) dried beef, chopped
- 1/4 cup (60 ml) fresh parsley, chopped
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium heat.
- Add the chicken pieces to the skillet.
- Season the chicken with salt, black pepper, garlic powder, onion powder, and paprika.
- Cook the chicken until it’s browned and cooked through, about 6-8 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of olive oil.
- Stir in the sunflower seed cream and chicken broth.
- Bring the mixture to a gentle simmer over medium heat.
- Add grated Parmesan cheese and stir until melted and smooth.
- Stir in the lemon juice, dried basil, and dried oregano.
- Add the sun-dried tomatoes to the sauce.
- Return the cooked chicken to the skillet.
- Add the cooked pasta to the skillet and toss to combine.
- Allow everything to heat through for 2-3 minutes.
- Remove from heat and stir in the chopped fresh parsley.
- Serve the creamy sunflower chicken pasta warm.
