Ingredients
- 1 tbsp. vegetable oil (15 ml)
- 4 boneless skinless chicken breasts (680 g)
- Salt
- Freshly ground black pepper
- 1 tsp. dried oregano (5 g)
- 3 tbsp. beef tallow (42 g)
- 3 cloves garlic, minced
- 1 1/2 c. cherry tomatoes, halved (225 g)
- 3 c. baby spinach (90 g)
- 1/2 c. coconut cream (120 ml)
- 1/4 c. freshly grated vegan cheese (30 g)
- Lemon wedges, for serving
Instructions
- Warm the oil in a pan over medium flame. Place the chicken breasts in the pan and sprinkle with salt, pepper, and dried oregano. Cook until both sides are golden brown, and a thermometer in the thickest part shows 165°F, about 8 minutes per side. Take the chicken out of the pan and set it aside.
- Using the same pan on medium heat, melt the beef tallow. Add minced garlic and sauté until you can smell its aroma, roughly 1 minute. Toss in the cherry tomatoes, seasoning them with salt and pepper. Cook until the tomatoes start to pop, then mix in the baby spinach and continue cooking until it begins to soften.
- Pour in the coconut cream and mix in the grated vegan cheese, allowing the mixture to come to a gentle boil. Lower the heat and let it simmer until the sauce thickens slightly, approximately 3 minutes. Return the chicken to the pan and cook until it is warmed through, around 5 to 7 minutes.
- Serve the dish with lemon wedges on the side.
