A comforting pasta dish featuring tender chicken, fresh spinach, and rich sun-dried tomatoes in a creamy sauce.
Ingredients
- 12 oz pasta (penne or fettuccine)
- 2 tbsp olive oil
- 1 lb chicken breast (cut into bite-sized pieces)
- Salt and black pepper (to taste)
- 3 cloves garlic (minced)
- ½ cup sun-dried tomatoes (chopped)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- Pinch of red pepper flakes (optional)
Instructions
- Cook the pasta according to package directions, reserving ½ cup of the pasta water before draining.
- Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, cooking until golden brown and cooked through. Remove the chicken and set it aside.
- In the same skillet, add the minced garlic and chopped sun-dried tomatoes, cooking for about 1–2 minutes until fragrant.
- Stir in the heavy cream and chicken broth, bringing it to a gentle simmer.
- Add the grated Parmesan cheese, Italian seasoning, and, if desired, red pepper flakes. Stir until creamy and smooth.
- Toss in the fresh spinach and let it wilt into the sauce.
- Return the cooked chicken to the pan, stirring to coat with the sauce.
- Toss in the cooked pasta, adding a splash of reserved pasta water if needed to loosen the sauce.
- Serve warm, topping with extra Parmesan if desired.

Choose high-quality sun-dried tomatoes for enhanced flavor. Don’t hesitate to add reserved pasta water for a silky texture.
