Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and sear until golden brown on both sides and cooked through, about 6-7 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Stir in the chopped sun-dried tomatoes and cook for another 2 minutes.
- Pour in the chicken broth and bring the mixture to a simmer.
- Add the heavy cream and spinach, stirring until the spinach wilts and the sauce thickens.
- Return the chicken to the skillet and coat it generously with the creamy sauce.
- Serve hot, garnished with freshly grated Parmesan cheese.
