Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Heat olive oil in a large skillet over medium heat.
- Season the chicken breasts with salt, pepper, and Italian seasoning, and add them to the skillet.
- Cook the chicken for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from skillet and set aside.
- Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
- Stir in the sun-dried tomatoes and cook for another minute.
- Add heavy cream and bring to a simmer.
- Stir in the spinach and Parmesan cheese until melted and combined.
- Return the chicken to the skillet and coat with the sauce.
- Cook for an additional 2-3 minutes to heat through.
- Serve hot.
Notes
For a kick, consider adding a pinch of red pepper flakes. Use fresh spinach for best results.
