Description

A hearty dish combining tender chicken with a rich creamy sauce, sun-dried tomatoes, and fresh spinach, perfect for any occasion.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Italian seasoning to taste


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning, and add them to the skillet.
  3. Cook the chicken for about 5-7 minutes on each side, or until fully cooked and golden brown. Remove from skillet and set aside.
  4. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant.
  5. Stir in the sun-dried tomatoes and cook for another minute.
  6. Add heavy cream and bring to a simmer.
  7. Stir in the spinach and Parmesan cheese until melted and combined.
  8. Return the chicken to the skillet and coat with the sauce.
  9. Cook for an additional 2-3 minutes to heat through.
  10. Serve hot.

Notes

For a kick, consider adding a pinch of red pepper flakes. Use fresh spinach for best results.
