Ingredients
- 2 large chicken breasts
- 2 tbsp olive oil
- Salt and black pepper
- 3–4 garlic cloves (minced)
- 1 cup heavy cream
- 1/2 cup parmesan cheese (freshly grated)
- 1 cup spinach
- 1/3 cup sun-dried tomatoes (chopped)
- 1 tsp Italian seasoning
- Chili flakes
- Fresh basil (for garnish)
Instructions
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken breasts and sear until golden brown, about 6-7 minutes per side, until fully cooked. Remove from skillet and set aside.
- In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
- Pour in heavy cream and stir in the freshly grated parmesan cheese, creating a robust sauce.
- Fold in the spinach and chopped sun-dried tomatoes, allowing the spinach to wilt slightly.
- Return the chicken to the skillet, ensuring each piece is coated in the rich sauce.
- Sprinkle with Italian seasoning and chili flakes to taste.
- Serve hot, garnished with fresh basil.
