Ingredients

  • 1 can black beans, rinsed and drained (240g)
  • 1 can chickpeas (240g)
  • 1 can corn, undrained (340g)
  • 1 can diced tomatoes with green chilies, undrained (280g)
  • 1 package ranch dressing mix (28g)
  • 1 tsp (5 ml) ground cumin
  • 1 tbsp (15 ml) chili powder
  • 1 tsp (5 ml) onion powder
  • 1 8 oz package light cream cheese (225g)
  • 2 chicken breasts (about 1 lb or 450g)


Instructions

  1. Position the chicken at the base of the slow cooker, then add the entire can of corn, diced tomatoes with green chilies, black beans, and chickpeas on top. Sprinkle the spices and ranch dressing mix over everything. Mix the contents gently. Place the cream cheese on top. Secure the lid and let it cook on a low setting for 6-8 hours. Blend the cream cheese into the chili mixture. Use two forks to pull apart the chicken into shreds. Mix everything well and serve.
