Ingredients
- 2 cups shredded chicken
- 1 cup sour cream
- 1 cup cream of chicken soup
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can (4 oz) diced green chilies
- 8 flour tortillas
- 1 cup white enchilada sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken, sour cream, cream of chicken soup, half of the shredded cheese, and green chilies. Season with salt and pepper.
- Fill each tortilla with the chicken mixture and roll them up tightly.
- Place the rolled tortillas in a greased baking dish.
- Pour the white enchilada sauce over the tortillas and sprinkle the remaining cheese on top.
- Drizzle with olive oil.
- Bake for 20-25 minutes or until golden and bubbly.
- Serve warm.
