Description

Creamy white chicken enchiladas are a comforting dish featuring tender shredded chicken, zesty green chilies, and a rich creamy sauce, perfect for any gathering.


Ingredients

  • 2 cups shredded chicken
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can (4 oz) diced green chilies
  • 8 flour tortillas
  • 1 cup white enchilada sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken, sour cream, cream of chicken soup, half of the shredded cheese, and green chilies. Season with salt and pepper.
  3. Fill each tortilla with the chicken mixture and roll them up tightly.
  4. Place the rolled tortillas in a greased baking dish.
  5. Pour the white enchilada sauce over the tortillas and sprinkle the remaining cheese on top.
  6. Drizzle with olive oil.
  7. Bake for 20-25 minutes or until golden and bubbly.
