Delicious and comforting creamy white sauce chicken enchiladas filled with shredded chicken and a rich white sauce, topped with melted cheese.
Ingredients
- 2 cups cooked shredded chicken
- 8 flour tortillas
- 2 cups white sauce (like Alfredo sauce)
- 1 cup shredded cheese (like Monterey Jack or cheddar)
- 1 can diced green chilies
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- In a large bowl, mix the shredded chicken, diced green chilies, garlic powder, onion powder, salt, and pepper until well combined.
- Spoon some of the chicken mixture into each flour tortilla, rolling them up tightly, and place seam-side down in a greased baking dish.
- Pour the white sauce evenly over the enchiladas.
- Sprinkle the shredded cheese on top.
- Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro if desired before serving hot.
Notes
Use rotisserie chicken for a quicker prep. Adjust spice level by adding jalapeños if desired.
