Description

Delicious and comforting creamy white sauce chicken enchiladas filled with shredded chicken and a rich white sauce, topped with melted cheese.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 flour tortillas
  • 2 cups white sauce (like Alfredo sauce)
  • 1 cup shredded cheese (like Monterey Jack or cheddar)
  • 1 can diced green chilies
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. In a large bowl, mix the shredded chicken, diced green chilies, garlic powder, onion powder, salt, and pepper until well combined.
  2. Spoon some of the chicken mixture into each flour tortilla, rolling them up tightly, and place seam-side down in a greased baking dish.
  3. Pour the white sauce evenly over the enchiladas.
  4. Sprinkle the shredded cheese on top.
  5. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until the cheese is bubbly and golden.
  6. Garnish with fresh cilantro if desired before serving hot.

Notes

Use rotisserie chicken for a quicker prep. Adjust spice level by adding jalapeños if desired.
