- 1/4 cup (60 ml) sweet chili sauce (or use spicy mayo for a tangy kick)
- 1 tablespoon (15 ml) chopped fresh cilantro
- Toasted sesame seeds
- Lime wedges
- Extra chopped cilantro
- Thinly sliced green onions
Instructions
- Set your oven to 375°F (190°C). Use a 12-cup mini muffin pan and carefully place a wonton wrapper in each section, shaping them into small bowls with pleats on the sides. Lightly coat each wrapper with cooking spray or a bit of olive oil to achieve a crispy, golden texture.
- Place the tray in the oven and let them bake for 8–10 minutes until they are lightly golden and crisp. Watch them closely towards the end to prevent burning. After baking, let them cool slightly in the tray before transferring them to a plate or wire rack.
- Meanwhile, in a medium bowl, combine the cooked chicken pieces with the sweet chili sauce, ensuring every piece is well coated. If you prefer extra heat, feel free to add some spicy mayo, Sriracha, or a dash of soy sauce for a deeper flavor.
- Gently cut your ripe avocado into small pieces. Be careful not to overmix to maintain the texture of the chunks. If preparing in advance, a little lime juice will help keep them from browning.
- Once the wonton cups have cooled and are crispy, start assembling by placing about a tablespoon of the chicken mixture into each shell. Add a few pieces of avocado on top, plus a sprinkle of chopped cilantro and optional toppings such as toasted sesame seeds or green onions.
- Place on a serving dish, add a squeeze of fresh lime juice over each, and serve right away. These taste best when the wontons are freshly crisp!
