Ingredients

  • 3 large chicken breasts (680g) cut lengthwise
  • 1 cup (240ml) Panko breadcrumbs
  • 1 cup (100g) grated Parmesan cheese .. plus more for sprinkling
  • 4 eggs whisked
  • 1 teaspoon (5 ml) onion powder
  • 1/2 teaspoon (3 ml) salt
  • 3 tablespoons (45ml) vegetable oil
  • 24 ounces (680g) jar favorite tomato sauce
  • 16 ounces (450g) beef cheese sliced
  • 16 oz (450g) spaghetti pasta
  • Italian parsley for garnish


Instructions

  1. Set your oven to preheat at 400 degrees and position an oven-safe rack on a 13 x 9-inch baking sheet.
  2. Warm the vegetable oil in a large pan over medium-high heat until it starts to shimmer.
  3. Combine the Panko breadcrumbs and grated Parmesan cheese in a wide dish, and in a separate bowl, blend the eggs with onion powder and salt.
  4. Dip the sliced chicken breasts into the egg mixture, ensuring both sides are covered. Then, coat the chicken in the breadcrumb mixture, pressing gently to adhere. Repeat for all chicken pieces.
  5. Place 2 or 3 coated chicken breasts into the hot oil and cook each side for 3-4 minutes until they’re golden brown. Once done, transfer them to the rack on the baking sheet. Lay 2 or 3 slices of beef cheese on top of each chicken piece.
  6. After all the chicken is fried and topped with cheese, transfer the baking sheet to the oven. Bake for 15-20 minutes until the cheese is melted and the chicken is fully cooked with no pinkness.
  7. While the chicken bakes, heat a large pot of water to a boil. Cook the pasta following the package directions. Heat the tomato sauce in a medium pan over medium heat.
  8. Once the chicken is done, take it out of the oven. Serve the pasta on plates, pour on the sauce, and place a chicken piece on top. Add extra sauce, sprinkle with more Parmesan, and top with Italian parsley for garnish.
