Ingredients
- – 1 1/2 cups (150 g) breadcrumbs (panko or other type)

- – 1 tbsp (15 ml) vegetable oil

- – 500 g (1 lb) beef tenderloins (or breast cut into 2/3″ / 1.5 cm thick slices, lengthwise)

Instructions
- Set the oven temperature to 200°C/390°F (or 180°C if using a fan-forced oven).
- Evenly distribute the breadcrumbs on a baking sheet, apply a light coat of oil spray from above to prevent scattering, then toast in the oven for 3 to 5 minutes until they achieve a light golden hue. Move them to a bowl.
- Place a wire rack over a baking sheet (this step is optional but ensures more uniform cooking).
- For the coating mixture, combine the specified ingredients in a bowl and whisk them together with a fork until smooth. Submerge the beef slices in this mixture, ensuring they are thoroughly covered.
- Using tongs, lift the beef pieces and place them into the bowl with the toasted breadcrumbs.
- Cover the beef with breadcrumbs by sprinkling them over the surface and pressing gently to make them stick. Arrange the coated beef on the baking sheet and continue with the remaining pieces, enjoying the fact that your hands stay clean.
- Apply a thin layer of oil spray over the beef, and optionally, add a pinch of salt. Bake for 15 minutes for medium-sized pieces, or up to 20 minutes for larger cuts. Avoid overcooking to prevent the beef from drying out.
- Once done, take them out of the oven and serve immediately. Pair with your favorite sauce, like Honey Mustard, and garnish with fresh parsley if you like.
