Ingredients
- 2 cups (480 ml) shredded cooked beef
- Juice of 1 lime
- 2 tablespoons (30 ml) taco seasoning
- Vegetable oil, for greasing pan and brushing on tortillas
- 2 1/2 cups (250 g) shredded cheddar cheese
- 12 corn tortillas
- Jalapeño Ranch
- Shredded lettuce
- Pico de Gallo
- Guacamole
- Pickled Red Onions
Instructions
- Set your oven to a temperature of 425 degrees F.
- In a mixing bowl, blend the beef with the lime juice and taco seasoning until well combined.
- Wrap the tortillas in a cloth and heat them in the microwave on high for 45 to 60 seconds to soften them.
- Generously coat a large baking sheet with vegetable oil. Arrange the tortillas on the baking sheet in a single layer.
- Place 1 tablespoon of cheese on one side of each tortilla. Spoon 2 tablespoons of the beef mixture on top of the cheese. Add an additional tablespoon of cheese over the beef mixture.
- Fold each tortilla over the filling and press gently to seal. Lightly coat the tops of the tortillas with oil.
- Place in the oven and cook for 17 to 20 minutes, turning them over halfway through, until they achieve a crispy texture.
- As the tacos cook, prepare the jalapeño ranch. Serve the finished tacos with jalapeño ranch and your choice of toppings.
