Ingredients

  • 2 cups (480 ml) shredded cooked beef
  • Juice of 1 lime
  • 2 tablespoons (30 ml) taco seasoning
  • Vegetable oil, for greasing pan and brushing on tortillas
  • 2 1/2 cups (250 g) shredded cheddar cheese
  • 12 corn tortillas
  • Jalapeño Ranch
  • Shredded lettuce
  • Pico de Gallo
  • Guacamole
  • Pickled Red Onions


Instructions

  1. Set your oven to a temperature of 425 degrees F.
  2. In a mixing bowl, blend the beef with the lime juice and taco seasoning until well combined.
  3. Wrap the tortillas in a cloth and heat them in the microwave on high for 45 to 60 seconds to soften them.
  4. Generously coat a large baking sheet with vegetable oil. Arrange the tortillas on the baking sheet in a single layer.
  5. Place 1 tablespoon of cheese on one side of each tortilla. Spoon 2 tablespoons of the beef mixture on top of the cheese. Add an additional tablespoon of cheese over the beef mixture.
  6. Fold each tortilla over the filling and press gently to seal. Lightly coat the tops of the tortillas with oil.
  7. Place in the oven and cook for 17 to 20 minutes, turning them over halfway through, until they achieve a crispy texture.
  8. As the tacos cook, prepare the jalapeño ranch. Serve the finished tacos with jalapeño ranch and your choice of toppings.
