Description

Crispy chicken taquitos offer a perfect blend of flavor and texture with seasoned shredded chicken and creamy cheese wrapped in crispy fried tortillas.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened
  • 1/4 cup sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • 10 small flour tortillas
  • Vegetable oil for frying
  • Optional toppings: salsa, guacamole, sour cream, chopped cilantro


Instructions

  1. Combine the cooked chicken, cheddar cheese, cream cheese, and sour cream in a large mixing bowl. Mix until well combined.
  2. Season the mixture with garlic powder, onion powder, cumin, chili powder, salt, and pepper. Stir thoroughly to evenly distribute the spices.
  3. Lay a tortilla flat on a clean surface. Spoon 2-3 tablespoons of the chicken mixture onto the lower third of the tortilla.
  4. Roll the tortilla tightly around the filling. Repeat with the remaining tortillas and filling.
  5. Heat about 1 inch of vegetable oil in a large skillet over medium-high heat.
  6. Place a few taquitos seam-side down in the skillet. Fry until golden brown and crispy, about 2-3 minutes per side.
  7. Remove the taquitos from the skillet and drain on paper towels. Repeat with the remaining taquitos.
  8. Serve warm with your choice of optional toppings such as salsa, guacamole, and additional sour cream.

Notes

Using rotisserie chicken helps save time. Consider preheating tortillas for easier rolling.
