Ingredients
- 4 chicken breasts (halved) or 2 large breasts cut in half
- 60g (1/4 cup) all-purpose flour
- 2 tsp (10 ml) garlic powder
- 1 tsp (5 ml) dried Italian seasoning
- 1/4 tsp (1 ml) black pepper
- 1 tsp (5 ml) salt
- 2 eggs
- 30ml (2 tbsp) milk
- 120g (1 cup) breadcrumbs
- 90g (3/4 cup) grated cheese
Instructions
- Set your oven to 375°F and line a baking tray with either foil or parchment.
- In a shallow bowl, mix together the flour, black pepper, salt, garlic powder, and Italian herbs.
- In a separate shallow bowl, beat the eggs with the milk until well combined.
- In a third shallow bowl, blend the breadcrumbs with the grated cheese.
- Use a paper towel to dry the chicken pieces.
- Create a station to coat the chicken in this sequence: flour mix, egg mixture, and breadcrumb blend. Start by covering the chicken with the flour mix, then dip it in the egg mixture, and finally coat it with the breadcrumb and cheese blend. Place the coated chicken on the prepared tray.
- Lightly spray the tops of the chicken with a nonstick spray.
- Cook in the oven for 35-40 minutes until the chicken is crispy, golden, and thoroughly cooked. If you want the tops to be darker, turn on the broiler for a few minutes, but watch closely to prevent burning.
- Sprinkle with freshly chopped parsley and serve with lemon wedges on the side.
