Ingredients

Instructions
- Set your oven to a temperature of 425°F to warm up.
- Cut one half of the lemon into thin circles and keep these slices and the other half of the lemon for later use.
- Dry the chicken thighs with a paper towel and season them on both sides with salt, pepper, and a small amount (around 1/4 teaspoon in total) of thyme.
- Pour olive oil into a large oven-safe skillet and warm it over medium-high heat. Once the oil is hot, rotate the pan to ensure it is fully coated. Place the chicken thighs in the pan with the skin facing down and cook until the skin is golden and crispy, roughly 4-6 minutes.
- Take the skillet off the heat and turn the chicken thighs over. Arrange the lemon slices around the chicken in the pan, and squeeze the juice from the lemon half over the chicken.
- Transfer the skillet to the oven and bake for 15 to 20 minutes (longer if the thighs are particularly large), until a thermometer inserted into the thickest part reads 165°F.
- Take the skillet out of the oven and let the chicken rest for 5 minutes. Serve the dish and enjoy!
