Ingredients
- – 4 boneless skinless chicken breasts (about 24 oz / 680g)
- – 1 tablespoon (15ml) vegetable oil
- – + 2 teaspoons (10 ml), divided
- – 1 tablespoon (15g) beef tallow
- – 2-3 tablespoons (30-45ml) fresh-squeezed citrus juice – any combination of lemon, lime, or orange (see note)
- – 2 teaspoons (4g) Italian seasoning – or Herbs de Provence
- – 1 teaspoon (2g) garlic powder
- – 1 teaspoon (2g) ground cumin
- – 1 teaspoon (5g) salt
- – 1 teaspoon (2g) chili powder
- – 1/2 teaspoon (1g) smoked paprika – see note
- – 1/4 teaspoon (0.5g) cracked black pepper
Instructions
- Heat your oven to 375 degrees Fahrenheit and combine all the ingredients for the spice mix.
- Flatten the chicken so that it is no thicker than 1 inch at any point.
- Coat the chicken breasts with 2 teaspoons of vegetable oil. Apply the spice mix evenly over the chicken.
- In a large skillet suitable for the oven, melt the beef tallow over medium heat and add 1 tablespoon of oil.
- Sear the chicken in the mixture of tallow and oil for roughly 2 minutes per side.
- Move the skillet into the preheated oven. Let it bake for 15-18 minutes, until the chicken is fully cooked and reaches 165 degrees Fahrenheit in the center.
- Drizzle fresh citrus juice, using lemon, lime, orange, or a mix, over the cooked chicken just before serving. You can serve the chicken breasts whole, or cut them into cubes or slices to use in your preferred recipes.
Notes
- Marinate chicken breasts in the spice mix for at least 30 minutes for a more intense flavor.
- Adjust citrus juice amount to your taste preference for a tangier or sweeter taste.
- Increase chili powder or add cayenne pepper for a spicier kick.
